Spicy Pork Stir-Fry with Jalapeños and Onions

Spicy Pork Stir-Fry with Jalapeños and Onions

This Spicy Pork Stir-Fry with Jalapeños and Onions is a delicious and quick dish, perfect for weeknight dinners or when you want something flavorful without much effort. Packed with savory pork, sweet onions, and spicy jalapeños, it’s a simple yet bold combination of textures and flavors.

The seasoning is centered around a classic SPG blend—salt, pepper, and garlic—which brings out the natural flavors of the pork while complementing the heat of the jalapeños. The onions provide a slightly sweet balance, while the garlic adds depth. This dish is stir-fried quickly, locking in the juiciness of the pork and leaving a satisfying char on the veggies.

The beauty of this recipe lies in its versatility. You can easily adjust the heat level by adding more or fewer jalapeños to suit your preference. It’s also a flexible dish; if pork isn’t your protein of choice, feel free to swap it with chicken, beef, or even tofu for a vegetarian option. Plus, stir-fries are great for adding extra vegetables like bell peppers or snap peas to bulk up the meal.

Served over a bed of steamed rice or noodles, this dish is a fantastic balance of savory, spicy, and sweet elements, making it a go-to recipe for those who enjoy bold, spicy flavors in a simple, comforting meal.

Ingredients:

  • 1 lb (450g) pork (shoulder or tenderloin, thinly sliced)
  • 1 large onion, sliced
  • 2-3 fresh jalapeños, sliced (adjust to your heat preference)
  • 3 cloves garlic, minced
  • 1 tsp hickory smoked SPG (salt, pepper, garlic)
  • 2 tbsp soy sauce
  • 1 tbsp vegetable oil (or sesame oil for extra flavor)
  • 1 tsp sugar (optional, to balance the spice)
  • 2 green onions, chopped (for garnish)
  • Cooked rice (to serve)

Instructions:

  1. Prepare the Pork:
Thinly slice the pork into bite-sized strips. In a small bowl, season the pork with salt, pepper, garlic powder (SPG), and soy sauce. Set aside to marinate for about 10-15 minutes.
  2. Stir-Fry Onions and Jalapeños:
Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the sliced onions and stir-fry until they begin to soften, about 3-4 minutes. Next, add the sliced jalapeños and continue to stir-fry for another 2-3 minutes until both the onions and jalapeños are slightly charred and fragrant. Remove from the pan and set aside.
  3. Cook the Pork:
In the same pan, add a little more oil if needed and increase the heat to high. Add the marinated pork slices in a single layer, and cook for 3-4 minutes on each side until browned and fully cooked. Stir occasionally to ensure even cooking.
  4. Combine Everything:
Once the pork is fully cooked, lower the heat to medium and add the garlic. Stir-fry for 30 seconds until fragrant. Add back the onions and jalapeños and toss everything together. Cook for an additional minute or two, letting the flavors meld.
  5. Final Touch:
Adjust seasoning with more SPG (salt, pepper, garlic) or soy sauce as needed. Garnish with chopped green onions for a fresh bite.
  6. Serve:
Serve the spicy pork stir-fry over hot cooked rice. Enjoy!

Notes:

  • For extra heat, leave some jalapeño seeds in.
  • You can add bell peppers or other vegetables to bulk up the stir-fry.
  • This dish works great with pork, but chicken or beef are good alternatives.

Enjoy your spicy, savory stir-fry!
